Slow Cook Angus Prime Tenderloin
慢煮安格斯黑椒牛柳
需要材料 -美國安格斯Prime牛柳(2吋厚)
調味料

20 克牛油

2 辦蒜

適量新鮮迷失香

適量海鹽

適量黑胡椒
做法

將牛油,蒜片, 迷失香連同中柳放入真空袋. 抽出袋內所有空氣

將慢煮棒放入水中, 溫度調至五十九度. 當溫度到設定溫度後將真空袋放入水中, 依照個人口味調教烹飪時間, 例如3-4成熟約1小時, 5成熟約1小時30分鐘

牛柳煮完之後從真空袋取出(真空袋內肉汁待用)

將牛柳放入平底鍋兩面煎至金黃色, 上碟後 Rest 大約5分鐘

最後將肉汁加黑胡椒煮成胡椒汁

20g Butter

Rosemary to Taste

2 Cloves of Garlic

A Pinch Salt

A Pinch Black Pepper
Steps

Put half of the butter and garlic as well as rosemary into a vacuum bag together with the beef tenderloin, seal the bag with the vacuum sealer.

Set the water temperature to 59'C, when the water reach the desire water temperature, place the bag into the water bath. Cook for 1 hour for medium rare, 1 and half a hour for medium.

Once the beef tenderloin is cooked, remove it from the bag.

Sear both sides of the tenderloin to brown.

Make the black pepper sauce by heating all sauce ingredients in a sauce pan.
